Recipe of the Week - Champion Nutrition USA Chocolate-Orange Cake Bites

Serious yummage coming your way with this one! Easy to whip up, only about 10 minutes in the oven, add the frosting and you've got yourself an ooey-gooey chocolaty treat that keeps you right on track!


Chelle's Chocolate-Orange Cake Bites
Makes 9
Recipe makes 9, but there's only 6 here because three got
gobbled up before I could take the picture!
Preheat oven to 350 degrees.
Line a baking sheet with foil and spray with cooking spray.

INGREDIENTS
1/2 cup coconut flour, sifted
2 packets Champion Nutrition UltraMet Low Carb protein powder, Chocolate Fudge flavor
1/2 of a medium zucchini, shredded with the skin on (don't worry, you won't taste it!)
12 Tbsp Egg Whites Only (or 4 egg whites)
1/2 teaspoon pure orange extract

DIRECTIONS

  • Blend the egg whites with the orange extract until fluffy. I used my Magic Bullet for this - soooo easy!
  • In a medium bowl, mix together the sifted coconut flour and 2 packets of UltraMet Low Carb. 
  • Add the zucchini and egg white mixture and stir together until blended. It will create a thick pasty batter (like cookie dough).
  • Drop dough by spoonfulls onto the cookie sheet (makes 9)
  • Bake 10-12 minutes, then remove to a wire rack to cool. 
  • When completely cooled, frost and enjoy!


FROSTING
1 packet Champion Nutrition UltraMet Low Carb Protein Powder (chocolate fudge)
Unsweetened Almond Milk, chocolate (you can sub water if you prefer).


  • Dump the packet into a small bowl and add liquid 1 Tablespoon at a time, mixing well, until it becomes a thick fudgy syrup. It does not take much liquid, so go slowly, stirring constantly. It typically takes about 4 Tbsp of liquid when I make the frosting. 
  • Let frosting sit for 5 minutes, then divide among the 9 cake bites.
  • Lick the bowl.
  • Lick the spoon.
  • Eat the frosted Cake Bite!
Nutrition Information: Per frosted Cake Bite... 113 calories; 14 g protein, 6 g carbs, 3 g fat.

  1. I have GOT to stop following your blog! Now that you're not in competition mode, you're making all kinds of things that are good for you but I can't eat!! LOL!!! I still have 25 lbs to drop!!! Don't worry, I'm making notes and will be trying them in January, after I hit my goal weight!!! Thanks for helping to strengthen my willpower!!!

  2. Hahaha! Robin, it's ok, these are training-friendly! High protein, low carb, low fat :-) I could eat these on competition diet! :-)

  4. Chelle, OMG! Girl I am SO on these. I just emailed you on the KT then came here. Chicken chorizo, chocolate orange cakes!!!!!!!!!!!!!!!!! YYYYYYYUMMMMO!!! one ? what is the amount of protein powder I would use if my scoop ='s 1/3 cup? Also if you don't mind what is the nutrition without frosting?

  5. Hi Luvena! The recipe was developed for Champion Nutrition, using their UltraMet Low Carb powder, which comes in packets (56g per packet). I will have to measure out how much is in a packet the next time I use it (which won't be long because it's seriously tasty! LOL!). If you use a different protein powder, all the nutritional data changes. You can use an online tool like NutritionData.com to run the recipe using your own ingredients and that'll give you an accurate numbers.
