Happy New Year!

New Year?? Um, Chelle? You've got your holiday's mixed up... that must have been some party this weekend! 


Nope! Though it was a great party! Today is October 31st... Halloween, Samhain, The Celtic New Year. (And my own personal Independence Day). This day has special significance to me, not just as my favorite holiday, but as a time to stop and reflect, evaluate, prepare, and move forward. Traditionally, this holiday commemorates the final harvest of the year and subsequent preparation for winter. Following that, everything I've done during this last 12 months has led to me to this moment of harvest. What worked? What didn't? What can I change? Am I prepared to face what comes next?

For me, this is always a day of goal evaluation and setting. One collection of goals inevitably involves my eating and exercise habits through the winter. This is a notorious time for weight gain. Between holiday parties, feasts, and frantic schedules, eating what's handy or what looks good often becomes the norm and by the time spring rolls around we, too, carry an extra roll. Is that what I want? NO! Have I worked this hard, changed my life this much, to go soft and squishy for the holidays? NO! Does this mean I can't enjoy holiday treats? No, again.

Living a lifestyle of health isn't about denying yourself, it's about honoring yourself. One of the ways I choose to honor myself this holiday season is to make my food and exercise deliberate. This winter won't be "well, I hope to..." - it will be, "I am..." I am eating clean, right now. I am exercising today. I am preparing my food for a week of healthy, clean eating. I am making time for myself. And I am going to enjoy holiday treats - with moderation, deliberation, and honor.

I am honoring myself, and my journey, by ensuring that come spring, the only soft & squishy things near me will be those stuffed Easter Bunnies!

I'll have some of my new goals for the year to share with you soon, in the meantime... I encourage you to take a moment today, on this cusp between the old and new, and reflect, evaluate and prepare. Don't wait until January 1st to set your goals. Start now, today.

What is one step you can take today that will bring you closer to your goal tomorrow?

It's COMING!!!! Announcement news....FINALLY!!

Hey EVERYONE!!!  This is your friendly (except when we are working out) neighborhood trainer here....Tabitha.

We have neared the end and we have set a date!!!  After reading, re-reading, re-reading, and re-reading, discussing, hair pulling, and then re-reading again.....No, that is NOT an exaggeration, we have neared the end of our decision process and have set a date.  Mark your calendars for November 1st everyone!  Please make sure to check out the website www.recipeforfitness.com for all the much anticipated information!  On that day we will be posting our decision of who will be participating in the Recipe For Fitness pilot project as well as a few additional surprises. WE LOVE SURPRISES! 


Chelle and I would like to take this opportunity, once again, to thank you for the overwhelming response to  be a part of this journey.  We are inspired and in awe of the strength and courage that you have as a group of dynamic individuals all with unique stories.  It is our pleasure to be on this path with you towards a healthier more active world.  Just remember....TOGETHER....we can move MOUNTAINS (ooooo that gives me a good idea for a workout!)

Wednesday Woops!

Today has been full of woops's! First Bethany ran out the door without her cheer bag. Woops! Then it wasn't where she thought it was... Woops! I finally found it, then packed my cooler, drove to the high school to drop off her bag, got to the office, unpacked my cooler to take a picture and discovered I'd smooshed my lunch... Woops! Next, I imported several excel files into an online program only to discover that an agent who shall not be named (but whom I might beat bloody with a large stick) had a completely improperly formatted file... Woops!

Hopefully, all the woops's are done for the day (please, pretty please??).

Dinner last night was stuffed eggplant and this time I remembered to take a picture. Ok, I forgot, but Bill and Tab remembered!
We devoured three of those last night, and the fourth went into my cooler for lunch today... yeah, the item that's smooshed. Woops. Oh well, it'll still taste good! Then the leftover meat & veggie mixture that's in those will be my dinner tonight. :-)

Slowly but surely, Tab and I are narrowing down the applications. We're nearly there. We'll go over the finalists tonight after class.

ROFL!!! You've GOT to read this!

Tab and I started my birthday weekend doing one of the things we do best... shopping! :-) Tab needed a costume, so away we went... What happened next was so funny, I nearly wet myself in the parking lot and when I told Bill about it he choked on his coffee!

Let me give a brief backstory... as I journeyed through weight loss, one thing I complained about was my diminishing... assets. lol.  Tab knew no sympathy. She'd say outright, "you wanna be fat with boobs or you wanna lose this weight?" When you put it that way... I lost the boobs. All this time later, she still has the same lack of sympathy for my mammary-challenged torso. When I showed her my halloween costume, she said, "How you gonna hold it up?" To which my husband very quickly covered his laughter with a cough. Not quick enough, he discovered later. It's a constant running joke among us, my lack of boobage. So when this happened... well, I took great delight in it for one, and for two... I'm a little worried I took too great a delight and I'm waiting for the Karma to come back for me, LOL!!

It's official - I've crossed over. I can no longer say I'm 40, now I'm in my 40's. How am I feeling about it? 
I think it ROCKS! I don't believe I've ever been excited about an adult birthday, but I am about this one! Great things are coming this year! Woot!!

Quick update on the case study - I know a lot of you are antsy waiting to hear the results :-)  We are going through these applications as quickly as we can while still being thorough. Remember when I said we got a LOT of applications? I mean A LOT!!! Our huge notebooks are straining! The good news is that we're nearly done. :-)  Soon, my friends, I promise!!

Birthday Present!

The self-crowned Queen of Sunday Food Prep has a new toy!!!
That, my friends, is awesomeness in a box!  THREE crockpots! I am indeed rubbing my hands together in delight and anticipation of Sunday's food prep... let's see... chicken in the center, beets on the right, maybe some grains or other veggies on the left?

I have been lusting over that box since I saw it at Kohls awhile back. Then, I got a 30% off coupon, then it went on sale, then the hubby said, "does this mean I don't have to find you a gift? Buy it."  LOL!
Mine, all mine! Woot!

Friday!!!!! Birthday Weekend!

Yay for Friday! Though I'm stuck in the office, I hope to accomplish much today so that tomorrow is totally clear. Bill and I are celebrating my birthday tomorrow (cuz Monday would be no fun, lol), and here's how it's going to go... Coffee with Bill, then 10:30 am - Tab's Total Body Conditioning Class. Eat, shower, then head out for a day of shopping! Woot! Bill hates shopping. HATES shopping. Once a year, though, he will go with me to wherever I want to go. :-) I try to not make it too traumatic for him, but I really enjoy his company so he can suck it up and shop. LOL! We'll be hitting a couple stores to look at patio furniture, then goodwill for his costume, then probably Fashion Square (suck it up, Bill). We'll finish the day with dinner out - though I have to be a little good, lol, as I'm still keeping the diet tight for my Halloween costume.

I thought I might have some issues with my birthday this year... I'm crossing over from "40" into "The 40's", lol. But I'm ok with it. In fact, I'm better than ok with it. I feel really good about where I'm at. Over the last year, I had knee surgery (didn't gain weight during recovery), attended the Arnold Sports Festival as an Eat Clean Diet Ambassador, became a Champion Nutrition sponsored athlete, I trained for, competed in, and brought home trophies from my first Figure Competition, got a writing contract with World Physique Women magazine, and am now working with my mentor and best friend to launch our own business - which has grown out of my journey.Oh! And I am celebrating THREE years of weight loss maintenance, to boot! Schweet! :-)   I'm pretty darn pleased with this last year, my 40th, and look forward to what's coming.

I actually began celebrating early. Last night after work, Tab and I hit the nail salon for pedicures. Two words, people... foot massage. Ahhhhhh! Tab and I worked on your applications while we had our feet done (seriously, you guys make this hard!).  We meant to get a photo, but forgot :-(  It was funny though, the two of us in those big chairs with our toes being painted while we're poring over these giant notebooks in our laps with neon stickies everywhere. LOL!

My toes are now a sparkly neon green (ha!), and then I had fakes put on for Halloween... I went long (goes better with the costume) and they're an awesome shade of red... it's called, "I'm not really a waitress". ROFL! I will not be keeping the length after the party, but the green toes? I might have to keep those awhile :-)
Yes, I do have midget toes. Whatever. 

We actually had a bet going on how long it would take me to injure myself with the new claws... Tab had me at 10 minutes. I win! I made it 2 1/2 hours. Ok, so it's not really a win (hello, injury), but still! :-) And no, I'm not going to talk about how I injured myself. It's mortifying.

Back home after that it was dinner - Taco salad. I ate while working on more applications - Bill watched UFC. I enjoy it, too, but have to say... those guys are more than a little nuts.

Recipe! Stuffed Eggplant

Inspired by a recipe Patricia sent me (Thanks, Patricia!!!), I tossed this together Monday night for dinner using Patricia's tips to utilize chopped tomatoes & the insides of the eggplant, and using the meat I had on hand... then made Tabitha and Bill my guinea pigs. Bwaha-haha. They told me it was great, I loved it, but the next day, Tab said, "You need to post that recipe, it was GOOD."  With that, now I'm sure the feedback was honest, lol!


Chelle's Stuffed Eggplant

  • 1 Eggplant 
  • 1/2 lb lean ground beef 
  • 1/2 lb ground chicken breast 
  • 1/2 can Glen Muir fire roasted crushed tomatoes 
  • 1 Tbsp Mrs Dash Tomato Basil Garlic 
  • 1 small pepper (any color) diced 
  • 5-7 crimini (or button) mushrooms, sliced or diced 
  • 1/2 tsp Mrs Dash Garlic & Herb 
  • Drizzle olive oil 
  • 2 Tbsp Parmesan Regiano 
Brown ground meats together, drain.
Add crushed tomatoes & Mrs Dash Tomato... 
Set aside. 

Preheat oven to 400. 
Line cookie sheet with foil. 
Slice eggplant in half, lengthwise, drizzle with olive oil and bake until tender - 30 to 40 minutes. 
Allow to cool slightly.

In a skillet, heat a drizzle of olive oil over med-hi heat. 
Add peppers & mushrooms and cook until just tender. 
 Remove from heat and add to meat mixture. 
Scoop out insides of eggplant halves. Dice up the insides and add to the meat & veggie mixture. 
Scoop that meat into the two hollowed out eggplant halves and top with 1 Tbsp Parmesan Reggiano each. Broil until cheese melts. 
Slice each half into two pieces (total 4 servings) 
Serve immediately.

When Your Body Betrays You - Part I

This is a hard post for me to write. I'm all about what you CAN do, and addressing the CAN'T is difficult. I'm a positive person, and much prefer to focus on the good, occasionally the bad, and rarely the ugly. Today is the ugly. If you've been part of my journey up to this point, you know that I have some physical issues. You know that they can limit me, but that I don't let them stop me. What you might not know, what I don't often share, is that sometimes they nearly break me.

I have arthritis, a very aggressive form in my knees. It's in my shoulder's, too, along with my neck, fingers and wrists. It's starting to develop in my ankles. It is what it is, and I live with it. I have pain every day, some more than others. Most of the time I ignore it. I take my joint care supplements, my hyaluronic acid, I eat a diet high in antioxidants, and I drink a lot of water. I do what I can to give my body what it needs to fight the inflammation and resulting pain, but sometimes it's not enough. Being active & fit, maintaining a healthy weight helps, but again, sometimes it's not enough. And it serves to remind me that I cannot control everything.

I detest being limited. I detest feeling weak. I guess that makes me human. Frankly, I'd rather be a goddess. Pain sucks.

The weather changed, again, yesterday, and brought with it the aches and twinges in my joints. I could feel the inflammation building throughout the day, and by the time I got to Tab's Muscle class, I was battling for every step. I was determined to push through, and I modified accordingly, but even that wasn't enough. At one point, we were doing this set where you set up  your bench/step, with your heavy weights at one end. On the other end, you start by doing dips off the end of the step, then you crabwalk around to the other end, do bicep curls, crabwalk back around, do dips, and around and around you go. I couldn't even hold my own weight up, I just scooted  from one end to the other. By the end of class, every joint was on fire. I just wanted a cold dark cave to curl up in.

I was furious with myself, felt betrayed by my own body. Here I am, in the front row of Tab's class, and I'm doing every exercise "wrong", I know I looked like I was less than half-assing it, and that my bad performance was reflecting on Tab. Everyone knows she trained me, and here I am hardly moving, hardly working. #$%@!  I was in so much pain, and so angry, that when she asked me after class what was wrong, I just burst into tears. Aghhh! I hate crying.

Being the World's Greatest Best Friend, Tab talked me off the ledge. Reminded me that it's temporary. I don't always feel this bad, and the important thing was that I didn't stop. I finished. She's right. It might not have been a stellar workout, but I finished.  I count that as a victory.

This morning, I still hurt. It's not the nuclear level of pain I had yesterday, but I'm nauseous and still inflamed. I did my cardio, and now I'm prepping for the day. I won't let this defeat me. I might not move very fast today, but I'm still moving, and that too, is a victory.

Champion Nutrition Recipe of the Week - It's Time For Chili!

It's October, that means it's officially Chili season, right? :-) I love Chili! High in protein, packed full of energy giving complex carbs, and sooo versatile! Around our house, chili goes a long way... Bowls of chili, chili topped nachos, chili topped salads, chili topped potatoes, chili topped hot dogs (uncured!), chili quesadillas, chili burgers, pasta, spaghetti squash... Yum! 


I love to use Bison for my chili, as it's lean but still high in CLA. 


Chelle's Chili

Makes 11 cups.

2 lb's ground beef or bison
3 Cans various beans, low sodium or no salt added - drain & rinse well. (I use pinto, black, kidney, & chili or cannelini beans)
2 large cans Muir Glen Organic Crushed Tomatoes (Fire Roasted) - Do not drain
1 Can (14.5 oz) Muir Glen Organic Fire Roasted with Chipotle, diced tomatoes - Do not drain
2 tsp dehydrated onion or finely chopped shallot
1-2 Tbsp Mrs Dash Southwest Chipotle
1-2 Tbsp Mrs Dash Fiesta Lime (and if you want it hotter, you can use Mrs Dash Spicy)
*optional: diced fresh jalepeno

DIRECTIONS
  • Brown the meat with the seasoning, drain (if there's a lot of grease, run hot water over the meat in a sieve/colander to really reduce the fat). 
  • Drain all the beans & rinse well (this will drastically reduce the sodium)
  • Put beans & meat in crockpot, add the 2 large cans of crushed tomatoes (don't drain), onion/shallot, spices and stir. 
  •  Cook on Low for 4-6 hours, or High for 2 hours.
Toppings...
Pico de gallo
Plain greek yogurt
Sharp shredded cheddar (a little goes a long way)
Reduced Fat Feta
Diced Onion

  
Beans and Tomatoes for the Chili 

Nutritional Information (this is for the recipe made with Beef):
Recipe makes 11 cups of chili.  1 cup serving = 332 calories; 33.8 g carbs; 9.4 g fiber; 35 g protein; 643 mg sodium; 8.3 g sugar; 5.1 g fat.


AWESOME, Killer, Brutal, Maniacal Exercise Class - or, Why Chelle Can Barely Move Today :-)

Wowser! Tab's Total Body Conditioning Class last night was a KILLER!! I don't know where she comes up with this stuff, but man-oh-man was it brutal! It was AWESOME!!! Every single part of me is sore this morning! Ha!  My heart-rate soared, my lungs burned (had to use my inhaler TWICE!), my legs turned to fire then rubber then fire, and I remembered that choreography is not my thing, haha! Turns out I can jab, cross, hook, undercut in slow motion, but not at fast tempo... and lord help us all when we add in the kick and stepback... I finally just went to jab, cross, kick, step and stuck with it, lol! When we moved to the plank step outs (plank position, feet together, then right foot steps to side, left foot goes left, then step each back to center) I thought, Whew, I can do these! Then she added the sets of pushups between... I don't know which was burning more, my arms or my legs, Woot! LOVED IT!!! I was sweating like crazy - Tab calls the sweat that rolls off of us "drops of awesomeness" - ha! Well, class was fully of awesomeness last night! Woohoo!

I'm also nearly to the point where I recognize that modification is a permanent part of my group-fitness experience. My knees and shoulders just do not allow me to perform without modification. Part of me knows that this is ok - it is what it is. The other part is still fighting. I WANT to be able to do the whole class without modifying, dagnabbit!

After, we headed home, we both had to let our stomachs settle before we could even consider dinner. Ha! Clean pizza - my only exception this week to the no evening carbs rule, and after burning nearly 500 calories in class, let me tell you I earned those carbs! :-)

We worked on your submissions, and will be meeting again tonight, and several more times this week until we can finalize our victims clients. :-)  Reading through your applications, I have so much respect for you guys and your willingness to take part in this study - it asks a lot of its participants... to not only commit to a tough program through the holidays, but to also have your photos and stats on the website so others can follow your journey. When I began mine, I wouldn't even let Tab weigh me, let along measure me or take my picture (frustrating for her!). I very much regret that now, and seriously applaud your courage and passion.

Time's Up!

The week of submission entries went by so fast! All entries are received and logged. In fact... I had bought a binder just for applications, but midweek, had to move to a larger one - and that one is FULL! Your response to the study stunned us and we're both humbled by and proud of the faith you've displayed in us. Tabitha and I incredibly excited to dig into your applications and move forward.

We'll be having our first of several meetings tonight after Tab's Total Body Conditioning Class (which I'm kinda sort of scared of after a week of no exercise, but don't tell her!! LOL!) I bribed her with my clean pizza, so the meeting is at my house :-)  Guess I better clear off the dining room table/my temporary office!

My weekend was full - and fun. I found my halloween costume and it was fun to make Bill's eyes bug out  when I tried it on for him. When I was heavy, I used to think that once I lost the weight (if I ever lost the weight) I'd be able to just buy stuff right off the rack... so very not true. One outfit can fit drastically different than another - in the same size. It was a little frustrating, but I had Bethany with me to keep me from going out on the ledge. We must have hit 5 different Halloween stores before we found mine. Hers, of course, she found in the first store. Lol.

Sunday food prep was a bit of a disaster. I did all my meal planning, then my grocery shopping mixed in with Halloween Party shopping (HUGE shoutout to the JoAnn's on Indian Bend!). Picked up the "specialty" light bulbs for Shiloh's ceiling fan, only to get home and find out they were the wrong ones. Argh. Bill put away the urgent stuff, while I raced back to Walmart. I returned the wrong ones, then discovered they don't carry the right ones... off to Home Depot, where they carry the right ones but they're freaking $3.32 each! WTH??? Explain to me why a ceiling fan in one room uses a different bulb than a ceiling fan in another - in the same house??? OY! And why can't they all just use standard bulbs?? Riddle me that, Batman!

Anyway, I headed back home, switched the laundry and discovered that I was nearly out of laundry detergent! AAARRRGGGHH! I was NOT going back out, so anyone doing laundry after me was SOL. I'll pick some up today. Then.... I threw in my son's laundry with mine (he conveniently left it at the house after his birthday dinner on friday), but when I pulled everything out of the washer, the ground in filth from his work clothes had not washed away, simply transferred to my clothes. Nice. Now I have to get more detergent. LOL.

Moving on... proteins for this week are roasted pork tenderloin, chicken chorizo & ground beef, Swai (like Tilapia but better). Veggies: asparagus, zucchini, red/yellow peppers (3 for $1 at Sprouts!), plus the usual shredded cabbage, lettuce & spinach. Starchy carbs: new potatoes, red potatoes, sweet potatoes, black beans. Fruit: grapefruit, apples, blueberries. Still had banana's from last week so I'm seeing a batch of banana-doodles in my future. Breakfasts: the usual oatmeal, protein powder, cinnamon and I've got either apples or pumpkin or banana to mix in depending on my mood. This morning, as I did cardio already, I'm opting for banana :-) with my 1 Tbsp NuttZo.

I'm prepping for Halloween (and that costume!) so no dairy over the next two weeks, no evening carb (meaning rice/pasta/etc - veggies galore, though!) and no treats. Yep. My treats are cut off. I did a last hoorah last night after dinner with a Paradise Bakery Chocolate Chip Cookie. LOL! What I can enjoy this week... my protein pudding! It's back on the menu! If I hit all my cardio and workouts, I can also have protein ice cream before bed :-)

Cardio this morning... no one ever accused me of doing things halfway. 20 minute session, I hit the treadmill. With my borrowed iPod in my shirt pocket (thank you, Bethany!) I cranked up the incline and got going. I really meant to keep it steady. I really did! But... I miss running so much, and it's been soooo long... I thought, well, let's just see how it goes... the first interval had the iPod bouncing out of my pocket and I'm fumbling and bumbling trying to catch it. Next one, I secured the iPod in my bra, but my knee protested. Hmph. One more try... did better, found a steady gait and settled in, then Linkin Park blared through my earbuds shocking me into a stumble. Evidently I did not set the song volume equalizer thingamajig on the iPod. Oops. Back to steady. I just kept increasing the incline from there, got in my session and headed home. Better luck next time,  yes? I'll roll out my IT band, ice my knee and be ready for class tonight.

Time is Running Out!

What a Week! Whew!

Made it to Friday! LOL! This week has been incredibly stressful. I felt like this pretty much all week...
But that's all about to change. I'm about to get up and beat the crap out of that evil guy in the funky hat. Here's how my week went...
Up at 5am, drinking coffee w/Bill by 5:30 and planning out our days.
6:00 to 8:00 - working on the new website pages and/or my continuing ed (I have the project from hell on deck right now)
8:00 - pack up my cooler then hit the shower. Leave house by 8:45
9:00 - 5:00 work, work, work
5:15 head home
5:30 begin working on website again. Break for dinner (thank the gods I did Sunday food prep!), then back to work. Check in with kids (Spring Break), catch up with Bill, maybe if we're lucky, catch a bit of DVR shows (Dexter! Woot!).
Most nights I was out by 11pm. Tuesday, I fell asleep as soon as Biggest Loser was over (9pm), last night was midnight.

Know what you didn't see in that roundup for this week? Fitness! I hated it! No cardio, no class, no nothin! I knew going in that it would be like that, but still I did not like it. I also knew going in that it was just going to be this week. PERIOD. 

At work I'm buried. Like so many companies, ours was hit hard by the economy. Unlike so many, our innovative leader kept our doors open, but we whittled down to bare bones. I'm kinda the last man standing. Whereas once I was just websites (building and maintaining), now I am an all around Girl Friday. We used to have whole departments for things like print media, graphics, MLS... now it's just me. Literally. Just me. And we just launched two new communities (signs, sales office displays, brochures, websites, documents, MLS...).  This is all in addition to my regular work. To say that it's been busy is a huge understatement. But that's why I haven't blogged much this week :-(  No time. That's changing too. 

Why are things changing?  Because I'm changing. With so many things to do, important things that need to get done, I let myself get shuffled back down the list, and that stops here. This coming week, I will get my cardio sessions and my workout classes. I'm hoping for a yoga class, too, but I'll be (haha) flexible with that. My project from hell for ISSA gets set aside for a week, and since we're ready for the soft-launch of the new site, I won't be hunkered over my computer porting pages (this week anyway, lol). My poor keyboard needs a break!

Saturday night is the closing of submissions for the Case Study, and from that point on Tab and I deliberate. 
I have to tell you, you guys are making it hard! LOL! Your passion and commitment shout off the pages of your applications, you awe us!  Your response, the number of submissions we're receiving, is amazing, and humbling. We're both incredibly excited!

This week I made the choice to buckle down and get things done, even though it meant sacrificing my gym time. Next week I'm making the choice to put myself back in the equation. While I have no control over my work load at the office, I'm not going to let it drive me nuts outside of the office. And Tab and I have many, many meetings ahead as we determine our victims clients for the Case Study. Next week is going to be awesome! :-)

So what's on deck this weekend? Well, today I'm in the office (this in-office on fridays sucks! That's NOT my  routine, and isn't supposed to be - I'm a 4-day in-office, 1-day on call usually). I will have to take off early to take my daughter for her Driver's Permit test (my baby - wow, I feel old!), then back to the office. Tonight is family dinner - we're celebrating my son's 20th birthday! Saturday is Recipe Development, menu planning for the coming week, and trying my hand at food photography. Sunday is Food Prep day - The Counter of Chaos! Plus the non-fun stuff - laundry & chores.

Here we go. Let's get 'er done!

Champion Nutrition USA - Weekly Recipe! Purple Ice Cream!

Ok, I know Summer is over, but... I'm in Arizona and we're still in the 90's here. Consider this one a last hurrah at ice-cream season :-)  Plus, the purple color is really fun!

I forgot to grab my camera right away! Oops!

For the blueberries....
1 cup fresh blueberries
2 Tbsp water
1 tsp vanilla (pure) extract.

Directions:
Place blueberries in a sauce pan with the water and cook over medium heat until reduced down to a "syrup" (about 10 minutes). Remove from heat and add vanilla (pure) extract.
Stir, and set aside or refrigerate until needed.

For the Ice Cream...
1 cup unsweetened chocolate almond milk
1 1/2 scoops Chocolate protein powder (my scoop = 1/3 cup)
1 Tbsp natural almond butter
1/2 cup 0% plain Greek yogurt

Directions:
Blend all ingredients.
Add about half of the blueberry sauce, reserving the rest for topping.
Blend again, just until the color spreads through the mixture.
Add to ice cream maker, following manufacturer's instructions. Mine takes about 20 minutes.
Scoop ice cream into a bowl, top with reserved fruit syrup and enjoy!

FYI... you can do this with any fruit! Sub out the blueberries for whatever is in season or handy!

Monday Mania

The insane busyness that was this weekend has ended... enter the insane busyness that is this week. Lol! Today I've gone from meeting to meeting, and am now shoveling lunch in my mouth while I try to get this post out just so you know I'm still around. Yikes!

It's Time To Take Over The World...

Today is that day, my friends! But we’re not going to try… we’re going to DO. And you are, too!

Some of you have shared my journey since the beginning and you have seen my struggles and my path to self-discovery and wholeness. I've done a lot of things right, and I’ve done a significant amount of floundering too. You’ve watched me do the silly, the outrageous, and the ordinary. You’ve been part of my growth.

My goal with my website was to share triumph and failure while helping others on their own journeys. I hoped my story, as it unfolded, would ultimately inform and inspire. As I watched my stats grow, I realized my little website was doing its job. Now, it’s time to take the next step. And that step is all about you and YOUR transformation.

So, where do we start?

We are launching a whole new website:  www.RecipeForFitness.com. It will take the heart and soul of my former website as well as the best of what Tab and I have to offer as certified and accredited fitness and nutrition professionals.  We are going to provide you easily understood tools that you can use to change your life. All the things you’re used to seeing on the other site will be updated into user-friendly pages that you can easily print for future reference.

But wait….. There’s more…..

We are going to offer custom plans for whole-life transformation. I’m not talking about the “custom” plans you can buy from other sites. Nothing is canned and no one gets the same plan. Each system is designed by Tab and I specifically, and only, for you. It’ll address your lifestyle, your needs, and your goals. In addition, it will change as you change. You WILL reach your goals. You WILL transform your life.

We offer you the opportunity to take the next big step and invest in yourself. We go one step further – we invest in you too. You become our next success story.  Because of that, our program will offer you complete support – both from the community here, and us. Chelle:  (Arm gesture that is censored).  Because King Bobo-Head, we don’t want to just rule the world, we want to change the world….
Tab:  Yeah, and this is the perfect way to start!

Of course, based on the time and attention to detail that is required to provide this level of commitment to you, in the future, there will be an associated fee for these services.  However, before we accept one single penny, we will prove that it can work.

What exactly are we doing here? We’re launching a 12-week PILOT/CASE STUDY. We need volunteer clients to participate in our program. As you progress, we’ll be posting updates, stats on the website and our blogs. You’re the proof of our uber- clean protein pudding. Make us proud!

Let’s get more specific…

This will be a 12 week program comprised of fitness and nutrition plans tailored especially to your needs.  Tab and I are going to be your nutrition and fitness guides starting in November (Yep! Right through the holidays, but we have a plan for that too)!  We are going to help you evaluate where you are currently with your health and wellness lifestyle, set goals, and achieve them…..we are going to help you change YOUR LIFE FOR GOOD 

Each week YOU WILL RECEIVE FROM US plans outlining your workout and nutritional duties for the week (I say duties, because these are NOT OPTIONAL).  In addition, you will have electronic access to us via Skype and e-mail for any questions and mandatory updates needed.  Each week WE WILL RECEIVE FROM YOU scheduled updates in order to assess your progress and plan for the following week.   We will be posting your progress (yes….. this includes photos) and status updates via the blogs and website so our super friendly and supportive Recipe for Fitness™ community can check in to see how you are doing as well as serve as a support system dedicated to your success.

I’m not gonna lie… These 12 weeks are NOT going to be easy but… they will ABSOLUTELY be worth it!  Please consider this seriously before you decide to commit yourself to this opportunity of a lifetime.  Tab and I expect 100% commitment, consistency, and dedication.  Compliance to the program is non-negotiable.   Understand that we want more than anything for you to succeed!  That means that there is no room for anything less than 100% dedication and hard work.  With that said, if you are ready to change and you like what you have read thus far, here is what you need to do.

I'm Here!

Sorry! I know I've been MIA since Friday's post. It's been crazy-busy around here!!! A lot of the crazy-busy is related to the awesome things comin' soon for RecipeForFitness.com  Woot! Saturday I attended Tab's seriously-kick-my-butt Total Body Conditioning class. Then I was off for my appointment with the Hair God, Daniel - I was not aware that my hair could get shorter in the back. It can. Lol! Sorry, Bill!

Later that day Tab and I met for a pow-wow on the absolute fabulousness (yes, it's a word, cuz I just used it) we've got headed your way. This super-productive meeting may or may not have included sharing a Paradise Bakery blondie (and not sharing a chocolate chip cookie). I'm not sayin', I'm just sayin'.

Sunday was my food prep day, but before I grocery shopped, I had way too much fun hitting Michael's - I came home with the coolest door hanger! I'll have to get a picture of it to post tomorrow. Here's food pics...
Baggies with 1/2 cup oatmeal, 1 scoop protein powder and
1 tsp cinnamon. Containers with 1 Tbsp NuttZo.
Freshly grilled chicken. What you don't see here is my big
boxer, Nakki, sitting at my feet the whole time I was
cooking these, with the, haha, puppy-dog

A whole-lotta chicken! Chicken breast tenders, grilled
on the Foreman Grill then portioned out (4 oz portions).
Veggies in steamer bags, chicken portioned out, oatmeal packets ready...

This brings me to yesterday...

That really is only 1/2 a cup of brown rice, but on the plate
it spreads. Also featured here (lol) 4 oz of grilled chicken
breast and 1.5 cups steamed veggies.
After work I hit up Tab's TBC class at 5:30. KILLER class! It was awesome!!! I burned 435 calories! Woot! And today - I am so freakin' sore! I say it often - you get out of it, what you put into it. Well, I put my all into last night's class. It was the BEST way to get out all my frustrations, and I felt fantastic afterwards (and sweaty, lol!). Following class, Tab and I had another meeting over hot dogs (yes, indeed they were clean!).

Today's food:
Breakfast: Apple Pie Oatmeal and half a grapefruit
Snack1: 4 oz grilled chicken breast, apple and kombucha
Lunch: 4 oz grilled chicken breast, 1.5 cups steamed veggies, 3 oz steamed potatoes
Snack2: 6 oz Chobani vanilla 0% greek yogurt and raw almonds
Dinner (not pictured): BBQ Beef in pitas and salad
Mega-Uber-Yummage! Apple Pie Oatmeal!
 A couple weeks ago, I saw Kombucha in the store and realized I could drink this again! During competition prep, it was out because of the carbonation. I picked up a couple bottles, put them in my fridge and promptly forgot all about them! Oops! This morning I was so excited to put one in my cooler (yeah, I'm a dork). At snack time I eagerly pulled it out...

And it did this... REALLY????? Not cool, Kombucha! Not Cool.


Drat.

Champion Nutrition USA - Weekly Recipe! Apple Pie Oatmeal

Though I've been on a pumpkin binge, I broke with my current obsession yesterday to try out something new for breakfast. And I'm soooo glad I did! Serious yummage! It's October, so the stores are full of fresh apple cider - which got me thinking... hmmmm, what if I use apple-cider instead of ....  and away to the kitchen I went. I've got some fabulous recipes coming soon with apple-cider as the star ingredient.  But back to yesterday... I swapped out my beloved pumpkin for applesauce (1/4 cup, unsweetened) and used apple cider instead of water to mix my oatmeal & protein powder. A dash of cinnamon, a dash of nutmeg, a tablespoon of NuttZo (if you haven't tried this yet, you should!) and a new breakfast bowl was born. But I knew I could do better. :-)  This morning, I proved it.  Here you go - another oatmeal recipe that proves oatmeal is NOT boring!

Chelle's Harvest Apple Oatmeal
Makes 1 serving

Ingredients

  • 1/2 cup dry oatmeal
  • 1 scoop vanilla protein powder (my scoop = 1/3 cup)
  • cinnamon to taste (I used 1 tsp for oatmeal plus 1/2 tsp for apples)
  • nutmeg to taste (I used three shakes - technical, right?)
  • 1 small-medium apple (any kind, I used gala), cored and diced - skin on.
  • 1 tsp vanilla, pure extract (optional)
  • 1 cup apple-cider
  • 1 Tbsp NuttZo or other nut butter

Directions:

  1. In a bowl, mix together the oatmeal, protein powder and 1 tsp (or less to your liking) cinnamon.
  2. In a glass bowl, combine the apple chunks with more cinnamon and nutmeg (I used about 1/2 tsp cinnamon and 3 shakes of the nutmeg bottle), 1 tsp vanilla and a splash (1-2 Tbsp) apple cider. Cover and microwave for 1-2 minutes, until the apples are soft and the liquid is syrupy. Stir.
  3. Add the apple mixture to the oatmeal, add apple cider and stir until you get the consistency you like.
  4. Microwave 1 minute.
  5. Stir in NuttZo or nut butter.
  6. Enjoy!

NOTES: Why leave the skin on the apple? Two reasons. First, there are a gazillion nutrients in the skin (yes, my grasp of scientific terminology often leaves me in shock, too). Second, if you by chance get distracted and overcook your apples (it happens), the skin will retain a bit of crunchy texture :-)
