Champion Nutrition Recipe of the Week - Leftover Turkey?

Whatcha gonna do with alllll that leftover turkey? How about Burroladas? What's a burrolada, you ask? It's a delivery vehicle for leftover turkey! Ha! Seriously though, you can use up chicken breast, turkey breast, even pork tenderloin with this recipe, and have a tasty meal. You know how you get to the end of the week and that protein you've prepped, and the last thing you want is another "dose" of chicken/turkey/etc? Well, this will change your perspective! If you can't do dairy, there's a tip at the end of the recipe that will make this recipe work for you!

Leftover Turkey Burroladas

(burrito/enchilada)


Makes 12 burroladas.
Ingredients:
●  3-4 cups chopped turkey meat (or chicken breast or pork tenderloin)
●  1 dozen tortillas
●  1.5 cup low fat or fat-free greek yogurt* (see note below)
●  3 small cans of diced green chilies
●  1 can (14.5 oz) diced no-salt-added tomatoes (I use muir glen), including the juice
●  1 tbsp Sriracha Sauce (hot)
●  1 cup shredded sharp cheddar* (eliminate if dairy free)

Topping:
●  1 cup low fat or fat-free greek yogurt* (see note below)
●  1 tsp Sriracha
●  1 can diced green chilies
   (You can also add 1/2 cup of salsa if you like)
●  OPTIONAL:  1/2 cup shredded cheddar* (eliminate if dairy free)

Directions:
●  Preheat oven to 350. Spray a 9x13 pan (I use coconut oil).
●  Mix all ingredients (except the tortillas) in a bowl.
●  Divide into the 12 tortillas, wrap and place seam side down in pan.
●  Mix together ingredients for the topping, then drizzle over the burritos.
●  Sprinkle with a bit of cheddar if you like.
●  Bake for 30 minutes, allow to cool for 10.
●  Serve



TIP FOR DAIRY FREE...  eliminate the Greek Yogurt and cheese, add a jar of salsa in it's place. Super-tip... if you have a plain protein powder, you can fake the yogurt! Mix 2 scoops powder with unsweetened plain almond milk until you have the consistency of sour cream or yogurt. Add Salsa and mix well, then add into the recipe where it calls for the yogurt.

per burrolada: 345 calories; 25 g protein, 31 g carb, 12 g fat.

  1. Awesome burrolados! Just perfect with a good healthy tortilla and whatever protein is available. Quick and easy and my teenage son thinks I'm a great chef!!
