Champion Nutrition Recipe of the Week - Eat Your Veggies!

Here's an easy all-purpose mix you can make at the beginning of the week and use in most anything. You can put it in peppers for a quick stuffed pepper, or add an egg or two for a speedy breakfast, top mushrooms with it, make lettuce wraps, top a salad... and so much more! Packed full of athlete-friendly veggies, this power protein mix will fill you up while helping you nurture those hard earned muscles.

Chelle's Power Protein & Veggie Mix
Here, I added 2 eggs and brown rice to make a muscle-building
breakfast post-workout.
makes 8 servings (based on 4 oz chicken per serving)
makes 5 servings (based on 6 oz chicken per serving)

INGREDIENTS
2 lb ground chicken breast, raw
1 zucchini
1 package baby bella crimini (brown) mushrooms
1 bell pepper (any color or combination of colors)
1 small onion (*optional)
Mrs Dash - any flavor
Cooking oil spray

DIRECTIONS 
Wash all vegetables.
In a food processor (or use a grater) shred the zucchini, mushrooms, and pepper.
Dice onion.
Blend together with raw ground chicken.
Spray a large skillet with oil, and cook mixture over medium high heat, seasoning with Mrs Dash to taste.
When cooked through, drain off liquid (zucchini and mushrooms have a high water content, and as they cook they'll release it).
Allow to cool, then store until needed.

NUTRITION PER SERVING
(based on 8 servings) 158 calories, 26g protein, 6g carb, 3g fat, 1g fiber, 139mg sodium.
(based on 5 servings) 252 calories, 41g protein, 10g carb, 5g fat, 2g fiber, 223mg sodium

Confessions from the Spotlight...

I'm still "high" from Monday's amazing Go Daddy video & photo shoot. Crazy fun! But... I wanted to share a little bit about the other side of an experience like that... for me. Those of you who've followed me for awhile know two things about me:

  1.  I'm a happy person. If happiness was a lifestyle, I'd be the poster child for it. Seriously, I feel like every time I smile, my inner happy just beams right out - and I smile a lot.  ;-)
  2. I wasn't always happy.

I come from a very broken place. My journey from fat to fit forced me to deal with that brokenness as layer by layer, I peeled back to discover a little more about my true self. I didn't just lose 80 lbs and a gazillion dress sizes - I found myself. I opened up. I learned I was strong, I was determined, I was smart, I was driven, I was capable... and I was worthy. That last one was hardest. If you followed my journey, you know I struggled. Many of you have faced the same struggles, and your messages and comments have kept me moving forward more times than I can count.

I've always been the shy girl - and for years, I was the shy fat girl. I'm the one on the sidelines cheering everyone else on. I hold the camera to take the photo - I'm not in the photo. But that's not who I wanted to be... that's not who I felt I really was inside. Because of that, I set out to continue my journey - past reaching goal weight - to transforming my whole self. If you've been following me since the old site (www.BillandChelle.com/fitness) then you might remember a few of the crazy out-of-my-comfort-zone things I've done...

Remember the burlesque class and performance that nearly killed me? (emotionally, yes, but I also fell off the stage in rehearsal, lol). I've done photo shoots for magazine features (Women's Health, Oxygen, Scottsdale Health), I've done a 5k wearing a neon green wig, I've flown to Ohio all by myself to work at the Arnold Sports Festival as an Eat Clean Diet Ambassador, and then the biggie... I competed in Figure. That makes twice now I've been on a stage nearly naked, lol.

With each experience, each achievement, the shy girl fades a little more and I gain a bit more poise, more assurance and confidence. This year's Arnold even found me letting loose and dancing with Tosca in the booth (something I NEVER could have felt free enough to do even just a year before). This Go Daddy shoot is another amazing experience I couldn't have pulled off before - the terror of the cameras would have buried me.

I went through the day with trembling nerves and a whole lot of excitement. I've never experienced anything so thrilling before and it was awesome! But to have the focus on me... was hard. It was much easier for me to answer the question about how my clients inspire me, than it was to answer how I inspire them.

As much as I want to be outgoing and share my passion, my first instinct in a group setting - a knee jerk reaction - is always to hunch my shoulders and hide. It's something I'm consciously working on.

Thankfully, the amazing people I was working with knew how to draw me out, make me forget the cameras, make it feel like we were one-on-one, and laugh with me when I flubbed up (Stafford interview, Take 8, LOL!). I'm proud of how I did - I'm not a professional, and I'm not supposed to be -that's the whole point. I'm just one woman who turned a lifestyle change into a small business with a passion for helping others. So yeah - I'm proud. But I also recognize something else... there's a difference between nerves and fear - and a couple times what I was feeling was fear.

That's not ok.

There were moments during Monday's shoot when the terror of my inner shy fat girl gripped me. I deliberately turned it off and moved forward because I refuse to allow that little bitch to control me anymore, but damn if I couldn't still hear her!


Regardless, I didn't wilt under the spotlight, and I hope I let my light shine (there's my "happy" again, lol) - but... I heard that little voice a little too often, and I realize that it's time to shut her up again. Time to show my brave. Time to remove the dimmer on my shine.


It's time to grow again.

Go Daddy IN THE HOUSE!!!!!!

Wow!!!! Yesterday was EPIC! Such a fun and wild day! I couldn't wait to share it with you guys!!! Now ya'll know that I LOVE Go Daddy. I mean, LOVE, LOVE Go Daddy. I've been a faithful customer for years! They're my go to source for domains, hosting, email, and more recently, my small business resources (like my store). Their customer support is the best - no matter what I break, they're right there to fix it. ;-) Recently, I was contacted about doing an interview sharing my experience as a Go Daddy customer. I was thrilled!

The super cool Steph gave me a call and we chatted for quite a while. It was fun! Then I found out there was more... I got another email from Steph, setting up a time for the producer and photographer to come by my house and scope it out for a photo shoot. Say again?? Billy and Rick came by, and we chatted for over an hour - all about what my business, www.RecipeForFitness.com is, what I offer, about me personally, my competing, my one-day food prep... it was fun - and a little confusing - what was all this for???

Then came the next email... Full shoot being scheduled. Hair & Makeup on site. Video, stills, interviews, spots, teleprompters... My head was spinning! How crazy was this?? The day arrived, and look what pulled up...

How cool is that??? The Go Daddy truck was parked in my driveway!! 

At 9 am sharp, my house was taken over by the incredible Go Daddy production team! I had hair and makeup (she was AWESOME, can I keep her????), wardrobe expertise by the amazing creative director, incredible photo and video, and the Executive Producer, Copywriter, and others I know I'm spacing. Everyone was so supportive and fun! It was a BLAST!!!! I felt like Cinderella gone to the ball!

They took photos and video - interviews, did a video spot for the opening of the Indy 500 (what?????), food prep, business... so many photos! Video and pics for potential advertising, for Customer Stories highlights, and wherever else they can use it. Every time I got a makeup / hair retouch I thought, "is this ME?? is this really happening??"  It was surreal! It was exciting! It was terrifying! When they said I'd be reading off a teleprompter (what????) I thought I must be dreaming! I think I managed ok, lol, but we'll see...

Actually, 7 million people will see!! Ermergerd!!!! :-D  Ya'll are tuning into the Indy 500 next month, right???  :-) hehehe!!! Can you believe this?? I just don't have the words to express what a great day - what an amazing opportunity, it was! It was also eye-opening to learn how much time and effort goes into a single photo - Holy Bejeebers! Those folks are freaking awesome! There was a boom in the kitchen, two cameras (video) going, one still photography camera, huge bright lights outside pointing in, big screens to help reflect/deflect lighting, monitors (3)... there was equipment everywhere! I was petrified that I was going to trip and break something! LOL!

The Creative Director was so sweet, and offered to take pics of the happenings with my phone...

The whole team was absolutely amazing, and everyone was incredibly talented. Wow! This was over the top cool! I can't wait to see what else they do with the video and photos! And... they promised to share a few of the pics from the shoot with me!

And today... Cinderella is back at work ;-) My moments as a Rock Star and budding Go Daddy Girl have passed and work awaits. hahaha! Wow. I mean, seriously. WOW. What an extraordinary day!

Champion Nutrition Recipe of the Week - Blueberry Balsamic Sauce

I love the combination of sweet and spicy - and I can handle quite a bit of heat, but I realize most folks prefer a little less hell with their sauce ;-) This seriously tasty sauce has just a touch of heat (and you can dial it up if you prefer), with a savory sweet flavor. It's super easy to whip up, and you can put it on beef, chicken, fish... whatever! Plus, it's PACKED with athlete-friendly antioxidants! ;-)

Blueberry Balsamic Sauce
Serves 4

INGREDIENTS
1 package (6 oz size) fresh blueberries*
1 tsp vanilla extract
1 medium size jalapeno, cored/seeded, and minced
1/4 cup balsamic vinegar
2 Tbsp water
1 packet Stevia

DIRECTIONS
In a small sauce pan, heat berries with vanilla and water over medium high heat for 2 minutes.
Add minced jalapeno, and continue cooking for about 4 minutes or until the berries begin to break down.
Add vinegar and bring to a rolling simmer.
Reduce heat to medium and let cook until reduced by about half. (about 15-20 minutes).
Use to top your choice of protein, or for a treat - top a serving of ice cream with this sauce! May I recommend my protein ice cream? ;-)

NUTRITION per serving: 35 calories. 0g protein, 9g carb, 0g fat, 1g fiber, 6mg sodium, 4g sugar.

*NOTE: If you don't have fresh berries available, you can try frozen but as I haven't done it myself, I cannot vouch for the results ;-)

When Will I EVER Learn???

That would be... never. Not a moment before, not a moment after. Sigh.

Yes, my friends, I did it again. Injury has struck. No - I was not struck by a car, or tackled by a random passerby. I did it to myself. Again. Oy! You know, I managed to climb onto my own roof without hurting myself...
locked my purse in my room - it had my keys.
Including my bedroom door key. UGH.
I drove out to Avondale for a Champion Nutrition demo - didn't hurt myself (though I did get lost and end up driving toward Tucson on the way home).

I even managed to tote in all the groceries without hurting myself...

I even did my food prep without burning myself! On my NEW George Foreman Grill (Evolve). 
My new toy and I grilled up tons of chicken & steak for this week's meals.
So what exactly DID I do??? 
Leg day. Yep. I did leg day. 

Here's how it (haha) went down...

Monday, I warmed up on the elliptical as usual. I made my way over to the leg press and set up my station - 30lb barbell for stiff legged deadlifts, 10lb plate and mat for my russian twists, laid out my water, towel and inhaler, stretched lightly, and set my weight for first set of leg presses. (No judging my weights - I've had such issues with my knees, hamstring, and previous herniated discs that I lift light for legs)... Warm up set, so 115lbs. Tossed out 20 like they were nothing. So I did my deadlifts, keeping my elbows bent because I needed a better stretch but can't increase the weight (shoulder). Did my twists followed by a set of pulses (ouch). Back on the leg press. Moved it to 130lb. Another 20. Too easy (which is good, yay for strong knees!). Another round of deadlifts, twists and pulses. Back on the press... 145lb - did 15 of them with solid form, still felt like I could do more (yes, that's a hint of what's coming). 'nother round of deadlifts, twists and pulses.

Time for the last round.

I moved the pin to 160 lbs. I cannot tell you the last time I pressed 160. Seriously. I was pretty darn excited to slide that pin in! One press, two press... knees feel good - they're talking but not screaming - hamstring is silent. Three press, four press, five - OUCH!!!!!!!!!!! Done. Was it the knees? Nope. My tricky hamstring? Nope. It was my freakin' BACK. WTH???

I felt lightning zip up and down my back. I think I'd been so focused that last set on the weight and my knees that I didn't hold my form. Bah. I (carefully and slowly) removed myself from the press, stretched, breathed, stretched. I finished off the rest of the round then headed over to the donkey kick machine (three sets each leg), then the leg extension (three sets with a 10 count hold on the last rep). Then stretched again, then did 20 minutes on the stairmaster.

Now, if you have followed my blog long,  you know that I use the stairmaster like my own personal b##ch. It's not mindless stepping to nowhere. Each step I am flexing from toes to core, pressing through, pushing down. It's a killer workout. Well, my legs were so toast by the time I hit the stairmaster, every time I tried to push through a step, my legs started wobbling - bigtime! Lol! So, for the first time in several years, my 20 minutes was simply light steps to nowhere, haha. I then dedicated 15 minutes just to stretching out my back and legs.

Once home, I reached for the ice and the most amazing new product on the market... Bengay  Zero Degrees. Ahhhhh! I am tellin' ya, folks... it's worth every penny. Doesn't do a whole lot for my bad shoulder, but for my back and hamstring it's a little slice of heaven! Heaven during a snowstorm! LOL!


I am still using the ice pack and bengay. The pain is pretty strictly in my lower back. I'm also popping Wobenzyme. I did chest/triceps yesterday with only 12 minutes on the stairmaster (back was squacking). Today I took an active rest day. Movin' around, stretching, icing, bengay'ing. Lol. Tonight is bowling - I'm a tad bit nervous - we'll see how I feel during the warmup.

Seriously, though. When will I EVER learn??? I need a keeper! Yikes!!!

Champion Nutrition Recipe of the Week - Bringin' Back the Banana Muffin

I shared this fabulous recipe last year (January 2012) - and it's worth a re-visit! I can assure you of this as I found myself this week staring at some leftover bananas and a jug of protein powder ;-) The muffins are fantastic and really hit the spot after a killer series of workouts (more on that in the next post, lol). The recipe calls for Champion's Pure Whey in Banana Scream (awesome!), but if you only have vanilla, you can add a tsp or so of banana extract to boost up the flavor. For the frosting, I used low-fat cream cheese, but if your diet doesn't permit it, you can substitute one of my other frostings (see below).

Banana Protein Muffins 

By: Chelle Stafford
makes 6 frosted muffins (store in refrigerator in airtight container)

Ingredients:
  • 1/4 cup QUICK OATS, DRY 
  • 1/4 cup Coconut Flour 
  • 2 tbsp FLAX SEED, GROUND
  • 1/4 tsp Sea Salt 
  • 1 tsp BAKING POWDER
  • 2 large EGG WHITE
  • 1 tbsp APPLESAUCE, UNSWEETENED
  • 1/2 cup Unsweetened Almond Milk, Vanilla 
  • 1 tsp VANILLA EXTRACT 
  • 2 scoop Pure Whey Protein Powder, Banana Scream
  • 1 small very ripe banana, mashed


FROSTING:
  • 4 oz CREAM CHEESE, LOWFAT
  • 2 scoop Champion Nutrition Pure Whey Protein Powder, Banana Scream


Directions:
  1. Mix together the dry ingredients. 
  2. In a separate bowl, mix the wet ingredients, then blend together with the dry. 
  3. When nearly blended, add the cup of banana and mix together.
  4. Spray a muffin tin with clean oil (I use coconut). 
  5. Divide the batter into 6 muffin cups. 
  6. Bake at 350 for about 15 minutes. (I start at 10 and check them every 3 minutes until they're just starting to go gold/brown on top - don't over-bake these! You'll end up with a dry nasty rock.) Remove from oven when a knife inserted comes out clean (even if they don't look done). 
  7. Set on cooling rack.
  8. In a small bowl, mix 1 scoop Banana Scream protein powder with 4 oz Neufachtel cream cheese (lowfat). Continue mixing until smooth. 
  9.  Divide icing among the six cooled muffins.
nutrition information per muffin (with frosting):
182 calories, 16g protein, 14g carbs, 7g fat.


TIPS: Frosting alternatives...


Banana-Doodle Frosting
3 scoops vanilla protein powder (*my protein powder's scoop = 1/3 cup)
2 packets Stevia
½ teaspoon pure vanilla extract
1 Tablespoon butter (unsalted), softened
¼ cup unsweetened vanilla almond milk
Stir together until mixture resembles frosting. Spread over the six muffins


Protein Muffin Frosting
In a small bowl, mix : 2 Tbsp vanilla unsweetened almond milk with 1/2 tsp vanilla.Slowly add liquid to 1 scoop vanilla protein powder, stirring constantly. When all liquid is incorporated, you can add a few drops of coconut oil to "smooth" out the icing. Divide icing among the six cooled muffins.

Champion Nutrition Recipe of The Week! Chocolate Protein Panna Cotta!

Got a sweet tooth? A craving for chocolate? A goal to meet that doesn't allow for a sweet tooth or chocolate craving? Before you find yourself drooling in the candy aisle, try my Chocolate Protein Panna Cotta! Creamy, Chocolaty, Cool... it's a chocolate lover's dream! And... you can serve this to guests and they will NEVER know that this is a) healthy and b) athlete friendly.

What they don't know, they can't squack about, right?

Chelle's Chocolate Protein Panna Cotta
serves 6

INGREDIENTS
2 scoops Champion Nutrition Pure Whey Chocolate
2 cups Unsweetened Almond Milk, Chocolate
1 packet Unflavored, Unsweetened Gelatin (about 2 tsp)
2 packets Stevia (powdered)
3 oz Semi-Sweet Chocolate Chips
1/4 cup Unsweetened Cocoa Powder
1 2/3 cup Greek Yogurt, plain, fat-free
1 tsp Vanilla Extract (pure)

DIRECTIONS

1. Blend 2 scoops chocolate protein powder with 2 cups unsweetened chocolate almond milk. Allow to sit until all the air/foam gets to the top, then spoon it off and discard.

2. In a small bowl, sprinkle gelatin over 1/2 cup protein milk. Let stand 1 minute, then stir and let stand about 10 more minutes for gelatin to soften.

3. In a medium saucepan, whisk remaining 1 1/2 cups protein milk, the stevia packets, semisweet chocolate, and cocoa over medium-high heat until steaming, about 3 minutes. Add gelatin mixture and whisk gently until it dissolves, 2 to 3 minutes. Let cool 15 minutes.

4. In a large bowl, whisk yogurt with vanilla until smooth. Pour and stir chocolate mixture through a fine strainer into yogurt, then whisk mixtures together.

5. Oil 6 ramekins (about 1 cup size). Divide yogurt mixture among ramekins. Chill, covered, until set, 4 1/2 hours and up to 2 days.

6. Run a small metal spatula between panna cottas and sides of ramekins to loosen. Immerse ramekins 1 at a time to just below rim in hot water until edges of dessert soften, 20 to 30 seconds; lift out and dry bottom of ramekin. Invert a small plate over each. Hold plate and ramekin together and give a firm shake to release panna cotta, easing it out gently with the spatula if needed.

7. Scatter chocolate shavings over desserts if you like.

NUTRITION

per serving: 181 calories, 16 grams protein, 16 grams carbs, 6 grams fat, 1 gram fiber.

Who's coming to visit?

GoDaddy! What???? Yep!

A couple weeks ago I got an email from GoDaddy about a presentation they're putting together to highlight local businesses who partner with GoDaddy for internet solutions. I had a fun conversation / interview with one of the folks involved, which then led to me being moved on to the next phase - a phone call from the producer. He and his photographer are coming here (my home) tomorrow evening to "scout". From there, they'll determine the best way to tell my GoDaddy story and if all goes well, I'll be included in the final project! How freakin' cool is this????

Anyway - ya'll know me. I'm cool, calm and collected. NOT.
NOT EVER. lol!

I flew into a panic of spring cleaning that left my family to fall in line or get the hell out of the way. Shiloh got out of the way, everyone else fell in line, haha. Now, my house is clean, my counters uncluttered, my carpet cleaned (though it's crap rental-home carpeting that was NEVER cleaned before we moved in 3 years ago, and though we've done our best it still looks like CRAP), my walls scrubbed (again - rental-home paint... I think as much came off from the scrubbing as stayed on the walls), my baseboards done... etc.

We're still sans-air conditioning, so I'm grateful that the team is coming in the evening rather than the heat of the day. I'd hate to boil them. Not a good first impression. ;-)  The landlord is supposed to come over (again) tomorrow to "fix" the air (again). Cross your fingers!

Now that the panic has passed, the house is clean, the laundry is going... now... I'm brewin' myself some iced tea and relaxing! LOL!

What I can and cannot do...

It's been quite some time since I've done a pushup. With my shoulder (destroyed AC joint, biceps tendinitis and bursitis) it's probably been about a year since I've included pushups in my routine. I miss them. Desperately. Recently I've made some gains in the gym - more range of motion, less pain, more strength. I've gone from 12 lb bent over rows to 30 lbs. I've increased from no weight on the cable machine to 50 lbs for flyes and presses. From not being able to do an overhead pulldown to doing them with 30 lbs on the cables.

With this hard won progress, I decided it was time to test the pushup. I told my husband I wanted to try it at home, with him there. I didn't want to try in the gym, in case I collapsed, but I need someone around in case.

"In case what?" Bill asked.
"Well, you know." I said.
"No... I don't." he answered.
"Just in case, like if the clavicle snaps."
"YOU MEAN LIKE IF IT BREAKS???"
"Yeah, like that. If it goes wrong I just need someone to drive me to the hospital. No big deal."
"You're a freak. You know that, right?"
"Yep. You in?"
"Yep." (I have such a great husband).

So, I roll my shoulders, stretch a bit. I'm nice and rested. Let's do this.

I get on the floor.

I get in position.

I test my weight - shoulder feels solid.

Ok. Deep breath. Here we go...

Down and up.  Pause.

"Well, how does it feel?" asks the hubby.
"Eh." I reply.

Down and up. Pause.

"WELL????"
"Yeah. Those are still on the banned list."

I get up. Roll my shoulder - only halfway this time. Yep. Here it is. My reminder...

 For all I can do, there are still things I can't. And I should be tied up and tossed in a closet if I try to do them again.

Reclaim Your Cart!

Spring is in the air... I know some of ya'll are still dealing with frigid weather, but here in AZ (don't hate me, lol) we're enjoying balmy 85 degree days. Know what that means? Wardrobe change... tank tops, sleeveless dresses, shorts, and... swimsuits. Know what that means? Time to clean up the grocery cart! Eat Clean to bare those arms confidently! Motivation - a'la Alicia Keys and Reebok

I get asked a lot (A LOT) about how I stay motivated to eat clean, exercise, and just generally keep going forward. My answer is always the same. I don't. Motivation is like a butterfly - it'll flit in and out of your life. The key is to act as if it's always there. Do what you know needs to be done. Regardless. Yes, there will be days when life gets in the way - it happens. No, you don't have to let it stop you from reaching your goals - or maintaining them.

One of the things I enjoy, that I find motivating, is when celebrities share from the heart about their own lifestyles. I love when they're honest about struggles. Those incredible bodies don't happen by accident, and I always enjoy getting a bit of insight into how they - with their insane schedules - make it happen.

Thursday?? How is it Thursday??


This week is flying! Last weekend I had a great time with my brother, sister and niece in town for a visit! My niece was checking out ASU and their softball program. We hung, chatted, ate, thrift-store shopped (yes, that song is stuck in my head, lol). All the good stuff. :-) It was sad to see them go back home to Sacramento, but they'll be back in August for the wedding (yay!!!).


Food prep was done - craziness as usual ;-) I got to beat the bejeeber's out of some chicken breasts - Maybe I enjoyed that part too much. My family kinda disappeared. Hahaha.

My highlight was finding Darth Vader EARBUDS! Yes! Yes, I did! And I have been wearing them to the gym all week! Folks don't notice them until I hit the cardio equipment - then those double-takes can be dangerous - just sayin'. ;-) Dude, you might wanna hold onto those railings if you are gonna stare at my earbuds while running. Lol!


I've been up to my (haha) ears in my BIG PROJECT. (can't wait!). And this weekend marks a new first for me - I'm doing a demo for Champion Nutrition! Woot! I have my table, my goodies, and I'm rarin' to go! I'll be doing a demo every Saturday this month (go away, nervous butterflies!).

Also this week was my hubby's birthday! We went to dinner at an Irish Pub (love me those dirty pear's!). Yesterday was a madhouse - tax appt, then running my youngest around between the H.S. and the community college, then (girly time) nail salon, then cramming to get work done, then bowling, then cramming work, then sleep. Ahhh, blessesd sleep.

I've been enjoying my post-workout meal more than usual lately, since I've been making my steak flatbreads ;-) I might enjoy it too much. Just sayin'.

Champion Nutrition Recipe of the Week - Protein Brownies

There are a million black bean brownie recipes around... how is mine different? It tastes good without adding sugar. ;-) No beany flavor, no funky texture, just lots of deep, dark chocolaty goodness. Oh - and protein! Check them out!

Chelle's Protein Brownies
serves 9

INGREDIENTS
1 medium (about 7 inches) ripe banana
1 15-oz can black beans (rinsed and drained well)
4 scoops Champion Nutrition Pure Whey Chocolate
1/2 cup unsweetened cocoa powder
1 Tbsp instant coffee granules
1 tsp vanilla
1/4 tsp sea salt
1 tsp baking powder
2 pkts Stevia
2 large eggs (at room temp.)
2 Tbsp coconut oil
1/2 cup dark chocolate chips

DIRECTIONS
Preheat oven to 350.
Spray an 8x8 baking dish with cooking oil
Blend together all ingredients (except choc. chips) until smooth, then stir in chocolate chips.
Pour batter into pan and bake until center is set and not jiggly. About 25-30 minutes.
Cool on wire rack.
Refrigerate leftovers (these are even better the 2nd day!).

TIPS: Use a food processor and whip those beans until they are smooth.Then add the rest of the ingredients. Cooking times may vary, so keep an eye on your pan - if you notice the edges cooking too fast, wrap them in foil leaving the center open.

NUTRITION:  per brownie - 262 calories, 16 g protein, 28 g carb, 10 g fat, 6 g fiber. 22g net carbs.
