Champion Nutrition Recipe of the Week - Blueberry Balsamic Sauce

I love the combination of sweet and spicy - and I can handle quite a bit of heat, but I realize most folks prefer a little less hell with their sauce ;-) This seriously tasty sauce has just a touch of heat (and you can dial it up if you prefer), with a savory sweet flavor. It's super easy to whip up, and you can put it on beef, chicken, fish... whatever! Plus, it's PACKED with athlete-friendly antioxidants! ;-)

Blueberry Balsamic Sauce
Serves 4

INGREDIENTS
1 package (6 oz size) fresh blueberries*
1 tsp vanilla extract
1 medium size jalapeno, cored/seeded, and minced
1/4 cup balsamic vinegar
2 Tbsp water
1 packet Stevia

DIRECTIONS
In a small sauce pan, heat berries with vanilla and water over medium high heat for 2 minutes.
Add minced jalapeno, and continue cooking for about 4 minutes or until the berries begin to break down.
Add vinegar and bring to a rolling simmer.
Reduce heat to medium and let cook until reduced by about half. (about 15-20 minutes).
Use to top your choice of protein, or for a treat - top a serving of ice cream with this sauce! May I recommend my protein ice cream? ;-)

NUTRITION per serving: 35 calories. 0g protein, 9g carb, 0g fat, 1g fiber, 6mg sodium, 4g sugar.

*NOTE: If you don't have fresh berries available, you can try frozen but as I haven't done it myself, I cannot vouch for the results ;-)
