Tasty Tuesday!! Carne Asada Street Tacos

Time for some amazing food!! This recipe is so easy, and you can make it with beef, chicken... whatever you like! It's so good, we actually made this 3 nights in a row last week! And I never have leftovers! I didn't make many changes to the original recipe (found on Pinterest), but tweaked it enough to make sure the flavors really popped! Give it a try and let me know what you think!! And here's an extra tip... make them with these fajita veggies!! OMG, so good!!!!

Carne Asada Street Tacos

"Craving street tacos? Got ya' covered!! These come together quickly, taste phenomenal, and are a real crowd pleaser! Plus, gluten free! They can be dairy free, too, just replace the cheese with a dairy-free alternative, or eliminate it."

Cook Time: 15


  • 1 lb steak, sliced thin (*see note below)
  • juice of 1 lime
  • 1/4 cup minced cilantro
  • 1-2 jalepenos, minced*
  • 4-5 cloves garlic, minced
  • 2 tsp sugar (or honey)
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cumin
  • sea-salt and pepper to taste
  • 1 kiwi, pureed (I just scoop it out and use a fork to mash it)



  1. Combine marinade ingredients in a bowl or large baggie.
  2. Add meat. Cover or seal.
  3. Refrigerate 1 hour, but not overnight. The kiwi will break down the steak and turn it to mush if you marinate overnight.
  4. Allow meat to come to room temp (about 30 minutes)
  5. When ready, heat a cast iron skillet over medium high heat.
  6. Cook in batches, using minimal marinade - this will give you that beautiful street taco char. If you use too much marinade in the pan, it'll still taste amazing, it just won't have that browned char.
  7. Serve with corn tortillas, shredded cabbage, shredded cotija and/or cheddar cheese, plain greek yogurt (in place of sour cream), taco sauce, pico de gallo, lime juice... whatever you like.
  8. Serve.

**Prepare this with these fajita veggies! YUMMY!!! And this pico de gallo.
**Prepare this with lean steak, or with chicken - or both! I used london broil, as it's an inexpensive but lean cut.
**Chilies... I like to use a combination of jalapeno and pasilla, but use whatever kind you like. Remember to carefully wash your hands after handling chilies, or wear gloves. Lol.
**TIP: Bake the tortillas and have tostadas! Look HERE for directions.

Marinate your meat. I made a double batch of marinade and split it between a pound of beef and a pound of chicken, all thinly sliced.

Tasty Tuesday!! Comfort Food that's Dairy & Gluten Free!

During Competition Prep, I had to avoid a few things in my diet (food sensitivities) - including chicken and dairy. Fortunately, turkey wasn't an issue, so guess what I ate a lot of? Lol! One night, my family sat down to eat a lovely, glory-smelling lasagna. Now, I'm not much of a lasagna person myself, but at that moment it was the only thing on the planet I wanted. Been there? My desire, drove me to the fridge... what do I have on hand, could I...? And Yes, I could. Wow! 

In fact, my dinner was so pretty, so yummy smelling, that they all wanted some, too! And you know what? They didn't know there was no "real" cheese in it! Ha! Sneaky Chelle strikes again!  But the very best part of this recipe is that it comes together in about 15 minutes!! Woot!! If you don't have precooked turkey or chicken breast, grab a rotisserie chicken on the way home and whip this one up tonight. You will NOT be disappointed!! 

"NOT" Lasagna

Gluten & Dairy Free Comfort Food! Lasagna style casserole that'll satisfy, and help you reach your goals! Ready in 15 minutes! Gluten & Dairy Free Lasagna Style Casserole
Preparation Time: 5 minutes Total time: 15 minutes

Serves 1

6 oz cooked Turkey Breast, diced into cubes (I roast a couple turkey breasts in my one-day food prep to have on hand throughout the week. You can use rotisserie chicken breast, too.)
5 sliced brown mushrooms
1 cup baby spinach
1/4 cup diced onion (I like red)
1/4 tsp Mrs Dash Garlic and Herb or Italian Blend
Olive Oil cooking spray
1/4 cup Marinara sauce (I used Newman's Own)
1/4 cup Daiya Mozzarella shreds

Instructions: (see step by step photos below)
Wash and chop mushrooms and onion.
Heat non-stick skillet over medium-high heat. Spray with olive oil cooking spray.
Add mushrooms, onions and Mrs Dash. Cook until softened.
Add spinach and cooked turkey breast, spray with oil again if needed.
Stir, cooking until spinach is wilted and turkey is warmed.
Remove from heat.
Immediately add marinara and "cheese", stirring to combine.
Allow to rest 1 minute for "cheese" to melt.

This recipe is gluten free, dairy free, corn free, and chicken free. You may replace the turkey with chicken breast, if you prefer.
If you can tolerate dairy, replace the Daiya cheese with mozzarella, but be aware that the nutritional information will change.
I encourage you tot try this recipe as it is written. It's super creamy, melty-cheesy, and full of "lasagna" flavor! My family had no idea there was no "real" cheese in it, and they LOVED it!!

Nutrition facts per serving: 355 calories | 45 grams protein | 22 grams carbs (net 19g carbs) | 9 grams fat | 3 grams fiber

Prep the veggies and gather ingredients
Saute the onions, mushrooms, and seasoning until veggies are softened.
Add spinach and turkey (or chicken)

Cook, stirring, until spinach is wilted and meat is heated through.

Remove from heat and add marinara and "cheese". Stir until melted and blended

Serve and Enjoy!!

WOOOHOOO!!! Did You See It????

Wow, oh WOW!!! I feel like I'm dreaming, somebody pinch me!! If you followed me last week on social media, you already know what I'm about to share. If you didn't, well, read on!! ;-)

I was given the amazing, incredible, awesome opportunity to stand with GoDaddy ON THE PODIUM as we rang the bell at the New York Stock Exchange Wednesday as they went public. OMG!!! There were 10 of us GoDaddy customers, along with the fantastic GoDaddy people and it was beyond words.

On March 20th I got a phone call from GoDaddy (remember Billy?), asking me if I wanted to be part of this HUGE milestone. Can I be honest with you guys?  I thought I was being punked. Seriously. Lol!!!

The answer was OMG YES!!! :-)

The next days were filled with the flurry of logistics, what do I wear? and an insane amount of sheer excitement! The amazing folks at GoDaddy arranged everything! I was treated like a freakin' ROCKSTAR every moment! And I mean every single moment.

I flew in to Newark, was picked up by car service and taken to the hotel in Tribeca - yes, I bounced in my seat the whole time. I actually did take pictures, but the bouncing evidently prevents focus. My bad. And you should have seen my face afterwards when I realized the Holland Tunnel goes UNDER the Hudson River. LOL!!

After checking in to my room, I had a bit of time before I needed to pick up my clothes for Wednesday, so I hit the street. Now, I was given a very narrow set of parameters in which I could wander the streets - by my family. Lol. No walking alone (sorry, guys), no riding the subway alone, no going sightseeing alone, wear my purse across my body and under my coat, etc. Lol.

Well, I had to walk at least a little bit, didn't I ??? ;-) Actually, what I did was walk around the block (because I was afraid I'd get lost, haha), but it was AMAZING!!! All those tall, old, fabulous buildings! It was overcast, spitting rain, cold, busy, noisy, and absolutely PERFECT! Oh, so very perfect! New York was like an old woman with a wicked sense of humor. I loved it!!!

Back at the hotel, I picked up my shirt & jacket for the next morning - freaking awesome!!! And was invited to a happy hour event that night. Cool!!! It was great!!! I got to meet Danica Patrick in person (I met her once on a Google Hangout I got to be part of), and she's such a cool person! I met a ton of GoDaddy people that night - it was amazing.

Five of those ultra-extraordinary GoDaddy people I met invited me to join them to see the 911 Memorial, then on to Times Square. The memorial was... beautiful, powerful, horrible, hopeful, and sorrowful. Perhaps someday I'll have the words to express what I felt standing there. But that day isn't today.

Times Square was unbelievable. Seeing it for the first time, at night, was an experience I'll never forget!! And it was so fun, walking, shopping, gawking - all in such fabulous company. Tyler, Dirk (who's a chef, as well as a GoDaddy guy!!), Katie, Desiree, and Lanie were so warm and welcoming, I felt like part of the GoDaddy family. We hopped on a subway back to the hotel (see kids, I was in a group!), which was another wonderful experience. Then we all crashed, eagerly anticipating the next morning.

Wednesday dawned with a bit of biting wind, but who cared??? :-) We hopped on the bus and headed to the New York Stock Exchange, all wearing our GoDaddy gear. We cleared security, received our badges (the little blue line means "cleared for the podium"), and were invited up to a sumptuous breakfast in a stunning room. Growing up in Northern California, living in Arizona - it doesn't prepare  you for the sheer grandeur of the beautiful old buildings in New York. The Stock Exchange is just breathtaking!

Eventually we were led onto the "floor", then those of us designated for podium headed up. To stand there and look out on the floor was outrageously awesome! We all indulged in a whirlwind of selfies, lol, then it was time! Candis Jones was the customer who rang the bell (and a really cool gal!!), and we all cheered, waved, and ok, a few of us cried. It was pretty overwhelming! :-)

Afterwards, we were led back downstairs to await the trading... it was incredible! Watching the shares gain in value, watching the sheer number of shares selling... WOW!!! And of course, there was plenty of entertainment - including Danica doing pushups on the stock market floor (she'd been challenged to do something that's never been done there, lol). It was so high energy, so fun, so... just... WOW!

We had a bit of time between the NYSE and the upcoming champagne celebration, so I got to see Trinity Church (gorgeous!), then we walked back from Wall Street to Tribeca (ouch, I was in heels, lol - but again, who cares??? This was NY!!). Eventually our group got back together again and headed to Chinatown. HK Wonton has what were purported to be the best veggie dumplings in NY - Can't say I've tried all the competition, but lemme tell you, those dumplings were phenomenal! As were every other dish we enjoyed there! YUMMY!!

From where we were in Chinatown, you could look up and see the sign for Little Italy across the intersection - very cool!

And the fish markets, the street produce vendors - oh to have that here!!! It was so neat!!! I just wanted to play with all the amazing food!


We then walked to the Hudson River, hopped in cabs over to Battery Park where I got my first glimpse of Lady Liberty (wow!!!). And let me say here, that by this point I had survived 3 car rides in NYC (1 hired car, 2 cabs) and I understand now all the things people say about NY cab drivers, lol. Just in case you're wondering - pedestrians do NOT have the right of way, in fact, every vehicle feels they have the right of way, and they drive like it! Ok, back to the story... so we had to head back to the hotel to dress for our very fancy night out, so we again hopped in cabs to go back. We girls managed to find the single, only, solitary cautious cab driver in the whole of New York City. In fact, the guys reached the hotel 25 minutes before we did - and they left after us. LOL!!!


Later that night, we boarded our transportation to the Standard Hotel, rode to the top, and stepped out into the most incredible views I've ever seen in my life. We could see Lady Liberty, One World Trade Center, and the Empire State Building. Incredible! And after the sun set? OMG! Stunning!!! With an inspiring and joyful speech from Blake Irving, we sipped on bubbling champagne, nibbled on incredible appetizers (I really, really want those recipes!!) and enjoyed visiting and sharing with each other. I got to spend some quality time with Kat Fang of Fang Restaurant (which you can be sure I'll be visiting first chance!!), and some of the other GoDaddy Customers - and of course, got to spend more time with my adopted GoDaddy family of five ;-)



After this, we were all swept off to Dos Caminos - a fabulous restaurant where we all had an absolute blast! I enjoyed so much getting to know everyone better, joking, teasing, and sharing stories. It was the perfect cap to a perfect experience. While most folks headed out to go dancing, I opted to not embarrass myself (or injure anyone else) with my klutz, lol, and joined a group going back to the hotel for some zzz's.

I spent the next morning shopping up and down Canal Street (and sorry, kids, I might have strayed a bit from the main just to explore - but my purse was safely strapped across my body and under my coat - I promise!). It was so much fun! I had to buy a suitcase to lug back all my loot (I flew there with only carry on luggage)! I even followed my daughter, Shiloh's orders and got myself a street hotdog. I had to send her a snapchat of me eating it to prove I'd done it, lol! Back at the hotel, I packed up (sigh), then grabbed a coffee and headed for a little park down the road. Those parks are so neat! They just pop up in the middle of an intersection! Wow!

I was able to sit and think about all I'd experienced, seen and heard over the last 2 days. It's all just so far beyond words and I'm so grateful to GoDaddy for sharing their historic milestone with me, with Recipe For Fitness. I've come home with a lot of ideas, plans and visions for the future. I've been inspired, encouraged, and educated - I can't wait to begin!
