Champion Nutrition Recipe of the Week - Protein Brownies

There are a million black bean brownie recipes around... how is mine different? It tastes good without adding sugar. ;-) No beany flavor, no funky texture, just lots of deep, dark chocolaty goodness. Oh - and protein! Check them out!

Chelle's Protein Brownies
serves 9

1 medium (about 7 inches) ripe banana
1 15-oz can black beans (rinsed and drained well)
4 scoops Champion Nutrition Pure Whey Chocolate
1/2 cup unsweetened cocoa powder
1 Tbsp instant coffee granules
1 tsp vanilla
1/4 tsp sea salt
1 tsp baking powder
2 pkts Stevia
2 large eggs (at room temp.)
2 Tbsp coconut oil
1/2 cup dark chocolate chips

Preheat oven to 350.
Spray an 8x8 baking dish with cooking oil
Blend together all ingredients (except choc. chips) until smooth, then stir in chocolate chips.
Pour batter into pan and bake until center is set and not jiggly. About 25-30 minutes.
Cool on wire rack.
Refrigerate leftovers (these are even better the 2nd day!).

TIPS: Use a food processor and whip those beans until they are smooth. Then add the rest of the ingredients. Cooking times may vary, so keep an eye on your pan - if you notice the edges cooking too fast, wrap them in foil leaving the center open.
